Hearty, Healthy, and TASTY Chocolate Chip Oatmeal Cookies

These are one of our family favorite recipes! It feels so guilt free I sometimes serve these cookies for lunch! HA!

I also almost always double the batch as they freeze really well. To be honest, they even taste yummy frozen! I usually freeze them after I bake them in quart size zip locs.

Here is the recipe!

Wet Ingredients:

1/4 cup ground chia seeds

1/2 cup hot water

1/2 cup melted coconut oil

1/2 cup unsweetened almond butter

1 cup Justins Maple Almond Butter (this brand almond butter really makes a difference!!! I’ve tried other brands and they don’t turn out as well)

1 cup coconut sugar or maple sugar

1 tablespoon vanilla

2 eggs

Dry ingredients

5 cups rolled oats

1/2 teaspoon baking soda

1 tablespoon Vietnamese cinnamon

Add ins

1 cup enjoy life mini chocolate chips

Also raisins or craisins work! 

Preheat oven to 325. Mix chia seeds with hot water and set aside. Mix all other wet ingredients. Add chia seeds to the mixture!  Mix in dry ingredients. Mix in add ins. Scoop onto baking sheet and flatten each cookie. Cook 10 -12 min. Freeze or enjoy them hot!
